When Gabriel Bremer and Analia Verolo bought Salts back in February,
they decided to keep the name so as not to frighten away the established
clientele. They needn't have worried Boston has warmly
embraced the unknown young chef (he's 26) and his Uruguayan fiancée
(she's the maître d'). Bremer is also a classically trained
percussionist, and his French-inspired cuisine is precise, beautifully
measured, and driven by what's fresh. The menu including
wild mushroom tarte Tatin ,ballottine of chicken filled with cèpes
and foie gras, and roasted halibut changes subtly every
week. Only whole roasted duck, stuffed with brioche and apples
and carved tableside, remains a constant. The 45-seat room, filled
with flowers and lit by candle chandeliers, encourages you to
stay all night.
