When Gabriel Bremer and Analia Verolo bought Salts back in February, they decided to keep the name so as not to frighten away the established clientele. They needn't have worried — Boston has warmly embraced the unknown young chef (he's 26) and his Uruguayan fiancée (she's the maître d'). Bremer is also a classically trained percussionist, and his French-inspired cuisine is precise, beautifully measured, and driven by what's fresh. The menu — including wild mushroom tarte Tatin ,ballottine of chicken filled with cèpes and foie gras, and roasted halibut — changes subtly every week. Only whole roasted duck, stuffed with brioche and apples and carved tableside, remains a constant. The 45-seat room, filled with flowers and lit by candle chandeliers, encourages you to stay all night.
